The sparkling wines from Camille Braun have an almost cult following in it's home region of Alsace. The certified organic vineyards and winemaking skill of Christophe Braun produce a generous wine with flavors of pear, and apple with a whiff of toasted bread and a hint of ginger. The cepage is 70% Pinot Blanc and 30% Auxerrois and produces an elegant wine with a fine, consistent mousse.
This wine makes for an elegant aperitif, but also works well throughout the meal with white meats and fish.
Christophe and Chantal Braun also make an excellent Cremant D'Alsace Rose if you can find it. (Pinot Noir is in demand these days in Alsace, but that's another story!)
