The sparkling wines from Camille Braun have an almost cult following in it's home region of Alsace. The certified organic vineyards and winemaking skill of Christophe Braun produce a generous wine with flavors of pear, and apple with a whiff of toasted bread and a hint of ginger. The cepage is 70% Pinot Blanc and 30% Auxerrois and produces an elegant wine with a fine, consistent mousse.
This wine makes for an elegant aperitif, but also works well throughout the meal with white meats and fish.
Christophe and Chantal Braun also make an excellent Cremant D'Alsace Rose if you can find it. (Pinot Noir is in demand these days in Alsace, but that's another story!)

It opens on a cool menthol note, with black cherry, plum and earthy notes.
I detect a hint of fresh herbs and some spices that linger on the palate. After being open an hour or so, one gets some orange peel, dried fruit and pipe tobacco. The finish is long and lively.
Notes of orange peel, dried cherry and roasted mushroom emerge after a few hours, on the way to a long and lively finish.
This Riserva, pairs well with robust dishes such as braised beef or a Tuscan steak.
